Mini Berry Protein Muffins

Hey guys! My phone broke down the other day and so I couldn’t really take and edit my pictures like I wanted, so I decided to just postpone this post for a bit. But don’t worry because the next week or so is STACKED with bullet journal stuff and new recipes (like this one) and a reading challenge update. Make sure that you’re checking in every day because I’ll have new posts going up daily until the end of the month!

To kick off this posting extravaganza, I’ve got these awesome Mini Berry Protein Muffins. I’ve been trying out some protein powder recently, and I actually really like it! I don’t just mix it with milk or water and drink it straight though, I usually throw a scoop into my smoothie bowl which makes it super creamy. I find that it’s a good way to incorporate some protein into my breakfast. The brand I use is Vega and I have their Protein and Greens powder in vanilla flavour. But if you decide to buy some powder to try out for yourself, do some research to find out what the ingredients are and where the protein is coming from. There are all kinds of protein powder; some are vegan, some get protein from animal collagen, and some have some artificial ingredients. Just make sure that your powder is right for you. If you don’t have any protein powder on hand, you can try and sub it out for whole wheat or all purpose flour, although I haven’t tested those out.

Anyways, I needed some new ways to use my protein powder. So why not make some muffins? And mini muffins, while I’m at it! Everything is cuter when it’s smaller. These muffins are naturally sweetened with maple syrup, and I find that the protein powder gives them a really nice flavour, like cake batter or something. There’s also an egg in here, which does give some extra protein and also acts as a binder. All of this protein and some whole grains from the oats, paired with a great taste, makes these muffins the perfect way to start your day! I used them to top a smoothie bowl, because, come on, mini muffins on a smoothie bowl? Does that not sound like the BEST THING EVER?

And I forgot to mention that these muffins have berries in them! I used saskatoons because I still have a whole ton frozen, but blueberries would be great as well. Now that it’s summer you might even be able to throw some fresh ones in there. So yeah, those are all of the delicious details of these cute lil’ muffins. Go find yourself a bowl (that’s right- this guy right here is a ONE BOWL recipe), mix some stuff up, pop these babes in the oven for like 15ish minutes and you’ve got yourself a snack that be lookin like a SNACK! Enjoy;)

Mini Berry Protein Muffins

Serves: Makes about 20 Mini Muffins

Total Time: 30 minutes

Ingredients:

  • 1/2 cup vanilla protein powder
  • 1 cup oats (I used quick-cooking steel cut oats, but rolled oats also work)
  • 2 tbsp melted coconut oil (mine was pre-melted by the summa heat lol)
  • 1/4 cup pure maple syrup
  • 1 egg
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 cup water
  • 1/3 cup fresh or frozen Saskatoon or blueberries

Directions:

  1. Preheat your oven to 350 degrees Fahrenheit, and line 20 holes in two mini muffin tins with paper liners, or grease with coconut oil.
  2. Mix together all of the ingredients in a large bowl.
  3. Scoop the muffin batter by tablespoon into the lined or greased mini muffin tin. Bake the muffins for 15-17 minutes, until a toothpick stuck in the centre comes out clean.
  4. Enjoy on smoothie bowls, oatmeal, as a snack, in cereal, or with yogurt!

Zucchini and Olive Pasta Bake

It’s SUMMA TIME and there’s an abundance of zucchini! Zucchini is delicious fried, roasted, in a fritter, and in salad, but today we’re using it in a Pasta Bake. Our guest star is the olive, which adds so much dang flavour into the sauce. If you’re not a fan of olives you can leave them out, but you don’t know what you’re missing. Don’t be a party pooper and just throw them in there!

We’re using my fave kitchen tool again- the amazing veggie peeler- to create little zucchini rolls for the bake.

The pasta that I used was Go Go Quinoa brand macaroni, and it usually takes about 4 minutes on the stove top to cook. I baked it in the oven for 10 minutes, and it was just slightly past al dente. So if you’re using just regular wheat macaroni or small shells (you don’t want to go any bigger with your pasta selection) that normally take 7-9 minutes to cook in boiling water, I bake them for 10-15 minutes for an al dente texture. My recipe below doesn’t account for that, so just keep in mind what kind of pasta you’re using when baking this bake.

Zucchini and Olive Pasta Bake

Serves: 3-4

Total Time: 50 minutes

Ingredients:

  • 1 large zucchini
  • 1/2 a red onion, thinly sliced
  • 1 clove of garlic, minced
  • 1 can of diced tomatoes
  • 1 can of red kidney beans, drained and rinsed
  • 1 200 ml can of sliced black olives, drained and rinsed
  • 1 tbsp olive oil
  • 2 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp red chilli flakes
  • 1/2 tbsp balsamic vinegar
  • 1/2 cup water
  • 1 cup Go Go Quinoa Macaroni **see note above if using a different pasta**
  • Salt and pepper to taste

Directions:

  1. Heat the olive oil in a large pot over medium heat. Add in the sliced onions and cook until translucent, about 6 minutes. Add in the garlic and cook for another 2 minutes, then add the beans, olives, tomatoes, basil, oregano, balsamic vinegar, chilli flakes, and some salt and pepper. Bring to a simmer and then turn the heat to low and cook for 25 minutes.
  2. While the sauce is simmering, use the veggie peeler to create as many zucchini ribbons as you can. The centre part of the zucchini, where the seeds are, won’t make nice ribbons, so you can dice it up at toss it in the sauce, making sure it has at least 10 minutes to cook in there.
  3. Add the macaroni into a small glass loaf pan or baking dish. Roll up each zucchini ribbon into a little rosette and place evenly spaced out in the pasta, like this:
  4. Once the sauce is done simmering, preheat your oven to 375 degrees. Add the 1/2 cup of water to the sauce and bring it to a hard simmer before removing it from the heat. Scoop enough of it into the baking dish so that the pasta and zucchini are fully covered, about 2-3 cups of sauce. You may have some sauce leftover that you can eat with the pasta after it’s baked or save for later.
  5. Cover the glass dish with foil (shiny side down) and bake for about 10 minutes. Remove from the oven and enjoy!

Tuna and Avocado Poke Bowls

I’m so excited about this recipe! You don’t even know. Obviously with the pandemic going on I haven’t been eating out as much, and yesterday I was just craving something different. Something that made me feel like I’m at a restaurant somewhere. The ingredients that I had on hand didn’t seem very restaurant-quality (canned tuna isn’t exactly a star protein), but I came up with something that HIT. THE. SPOT.

I love tuna poke- I love raw fish of any kind, really, but getting a big chunk of tuna steak is kind of expensive and it’s not the kind of thing that I just have lying around in my fridge. HOWEVER, I do have a large quantity of canned tuna. I mixed it with mashed avocado, soy sauce, rice vinegar, sesame oil and ginger to make an amazing mixture that definitely reminds me of delicious poke! Plus I formed it into little balls to serve, which really brought the restaurant vibe!

For the other components of this bowl, I tried to get creative and really have fun. We have some HOMEMADE pickled veggies people! Homemade!! They’re so simple to make and sooooooo tasty! Plus you have some wild rice, which contains tons of good-for-you vitamins, spinach, thinly sliced cucumbers, and a sprinkle of hemp hearts. Delish!

I really hope you give this bowl a try! It’s so fun to make and eat, and makes for a slightly-fancy at home dinner for when you can’t go out. Enjoy!

Tuna and Avocado Poke Bowls

Serves: 2

Total Time: 45 minutes

Ingredients:

For the Tuna:

  • 1 can of light chunk tuna, drained (I used yellowfin)
  • 1/2 a ripe avocado
  • 1/2 tsp sesame oil
  • 1 1/2 tsp soy sauce
  • 1 1/2 rice vinegar
  • 1/2 tsp ground ginger

For the Pickled Veggies:

  • 1/2 a large carrot, cut in half width-wise and shaved into thin strips with a veggie peeler (see Thai Ribbon Salad)
  • 1/4 of a red onion, sliced very thinly
  • 1 cup white vinegar
  • 1 tsp chilli flakes
  • 1 clove of garlic, minced

For the Bowl:

  • 1/2 cup wild rice
  • 1 tbsp rice vinegar
  • A couple of handfuls of spinach
  • 1/2 a cucumber, sliced thinly
  • Hemp hearts or sesame seeds for topping

Directions:

  1. Combine the wild rice with 1 cup of water in a pot. Bring to a boil, then cover and reduce the heat to a simmer. Cook for about 30 minutes, until all of the water has evaporated. Then remove from the heat, fluff with a fork, and let stand for 5-10 minutes.
  2. After the rice starts cooking, mix the vinegar, garlic, and chilli flakes in a small bowl. Add in the shaved carrot and thinly sliced red onion, trying to make sure that most of the veggies are covered by the pickling liquid. Cover the bowl with plastic wrap and place in the fridge for a least 35 minutes to pickle.
  3. In a medium sized bowl, mash the half avocado and stir in the soy sauce, rice vinegar, ginger, sesame oil and tuna.
  4. Once the rice is cooked, stir in the rice vinegar. Split the rice up into two serving bowls, and top with the pickled veggies, cucumber, a handful of spinach, half of the tuna mixture each, and some hemp hearts or sesame seeds.
  5. Enjoy!

Peanut Stir Fry

Hey there! Stir frys are actually awesome, in case you didn’t know. They’re loaded with veg (one of my favourite things), have a delicious sauce (another one of my faves), and this one has peanut butter (my ALL TIME favourite thing). This stir fry is also pretty much fool-proof and can be served with any type of grain you’d like; rice, brown rice, quinoa, noodles, we’re making it work.

If you really need to, you can also switch out some of the veggies I used as well. Snap peas, red onion, and even cauliflower would work in here. And if you want to add in some cooked chicken or beans for protein then go ahead! What I’m saying is, this stir fry is really versatile and works with pretty much anything.

This sauce is OFF THE HOOK though. You’ve got creamy peanut butter, spicy sriracha, and a little salt from the soy sauce. So good. Enough talk. Let’s get to the stir fry.

Peanut Stir Fry

Serves: 1-2

Total Time: 30 minutes

Ingredients:

For the Stir Fry:

  • 1 tbsp olive oil
  • 1/2 a white onion, thinly sliced
  • 1 small red bell pepper, thinly sliced
  • 4 small mushrooms, sliced
  • 1/2 a head of broccoli, cut into small florets
  • 1 carrot, sliced
  • Green onion for topping (optional)

For the Sauce:

  • 1 tbsp creamy natural peanut butter
  • 1 tsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp soy sauce
  • 1/2 tsp ground ginger
  • 1/2 tsp maple syrup
  • 1/2 tsp sriracha
  • Sprinkle of red chilli flakes
  • 2 tbsp water (or more if you want a thinner sauce)

Directions:

  1. Mix together all of the sauce ingredients in a small bowl and set aside.
  2. Heat the olive oil in a large pan over medium heat. Add in all of the sliced veggies and cook until they’re tender, about 8-10 minutes. Add water to the pan if it starts to dry out, and stir often to prevent burning.
  3. Once the veggies are soft, add the sauce and cook for another minute. Make sure that all of the vegetables are evenly coated.
  4. Remove the pan from the heat and serve the stir fry with noodles, quinoa, or by itself. Top with sliced green onion.

Loaded Maple Balsamic Salad

How’s it going guys? It’s starting to feel like summer vacation because the weather is finally warming up! I’m starting to establish some rhythm and being more productive, so that’s a plus. These posts are keeping me busy and thinking!

Sooooo I heard that lots of people don’t like salads. What’s up with that? I don’t know what kind of salads that they’re eating, but in my world, salads have hot veggies, cold veggies, protein, mashed avocado, and SICK dressings. Making salads is actually so much fun because you can play around with flavour combos and pretty much add whatever you want. Today I’m sharing the recipe for this Loaded Maple Balsamic Salad. And before you ask, yes, it is VERY loaded. You’ve got sauteed peppers and golden brown butternut squash, corn, carrots, cucs, spinach, avo, hemp hearts, and an awesome maple balsamic dressing. Is it even physically possible not to like that combo? I think not. Go check out the recipe!

Loaded Maple Balsamic Salad

Serves: 1 very hungry person

Total Time: 20 minutes

Ingredients:

For the Salad:

  • A handful of baby spinach
  • 1 tbsp olive oil
  • Half a bell pepper, thinly sliced
  • 1/2 cup cooked corn (I used frozen)
  • 3/4 cup frozen butternut squash chunks (If you don’t have these you can use roasted squash or sweet potato, and skip the steps related to the frozen squash)
  • Salt and pepper to taste
  • 1/4 of a large cucumber, diced
  • 1/2 a large carrot, shredded
  • 1/2 an avocado, mashed
  • A sprinkle of hemp hearts

For the Maple Balsamic Dressing:

  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1/2 tsp dried rosemary
  • 1/2 tsp maple syrup
  • Salt and pepper to taste

Directions:

  1. Whisk the dressing ingredients in a bowl and set aside.
  2. Heat the olive oil in a small pan over medium heat, and add in the peppers to saute.
  3. While the peppers are cooking, bring some water to boil in a small pot and add in the frozen butternut squash chunks. Cook them for about 2 minutes, then drain and add them to the pan with the peppers.
  4. Cook the squash and the peppers until they’re soft and have some browning going on on the outside, about 6 minutes. Then remove from the heat and season with salt and pepper.
  5. In a large bowl, arrange the spinach, peppers and squash, carrots, cucumber, and corn. Place the mashed avocado in the centre, and top with the hemp hearts and maple balsamic dressing.
  6. Enjoy!!

I hope this salad changes your mind about salads. It’s the salad to end all salad discrimination!
