Chocolate Date Puffed Wheat Squares

How’s it going guys? Oh, you’re asking what you should do today? Well I have a great answer because you NEED to make these Chocolate Date Puffed Wheat Squares!

I don’t buy dates very often because they’re a tad expensive, but someone gave me a bunch a little while ago so I knew I had to do something special with them. I’ve been eating them by themselves (which is amazing), and I’ve also heard that they’re spectacular with peanut butter, but there are so many awesome desserty things you can do with dates. I decided to make these CHOCOLATE DATE PUFFED WHEAT SQUARES. Sweet, gooey, and a little crunchy, they’re the perfect treat!

These squares are pretty easy to make, too. You just soften up some dates in warm water, them blend them up to make a kind of paste. Then you mix that with cocoa, maple syrup, coconut oil and vanilla, heat it up a bit, and mix it in with puffed wheat. I let mine harden in the fridge overnight after I pressed them into a greased pan, but you should be good to go in a few hours. That simplicity mixed with the fact that these squares taste AMAZING and have no refined sugar makes them a winner in my book.

So yeah, go make these squares and you WILL NOT regret it:)

Chocolate Date Puffed Wheat Squares

Serves: Makes 9 squares

Total Time: 30 minutes, plus at least 3 hours cooling time.

Ingredients:

  • 10 large Medjool Dates
  • 1/4 cup maple syrup
  • 2 tbsp cocoa powder
  • 1 tsp vanilla
  • 2 tbsp coconut oil
  • 3 cups puffed wheat

Directions:

  1. Heat some water in a small pot over the stove until it just begins to simmer. Remove from the heat and add in the dates. Let them sit for about 10 minutes to soften them up.
  2. Remove the pits from the dates and add them into a blender or food processor. Blend until a kind of paste forms, but don’t worry, it doesn’t have to be completely smooth.
  3. Transfer the date paste back into the small pot and add the cocoa powder, maple syrup, coconut oil, and vanilla. Place over low heat on the stove for about 2 minutes as you stir to combine.
  4. Remove the date mixture from the heat. Dump the puffed wheat into a large bowl and mix in the chocolatey dates. Press the soon-to-be puffed wheat squares into an 8×8 pan greased with coconut oil.
  5. Cover the pan with plastic wrap and chill in the fridge until firm enough to eat; around 3 hours. You can try and speed up this process by throwing the squares into the freezer.
  6. Once the puffed wheat mixture has cooled, cut it into 9 squares and enjoy!
  7. Store in the fridge.

Seedy Energy Squares

Sure, you’re probably doing school from home right now and haven’t been out of the house in awhile, but who says staying inside is easy? It takes a lot of fuel to be productive at home, and so that’s why I made these delicious Seedy Energy Squares. They’re full of healthy fats, with some protein in there, too, to keep you going all day long! These squares are also super flexible, so as long as you have oats and bananas, which are two of my staples, you can customize this recipe to your heart’s content. Dried fruit and nuts would be great in these. I used hemp hearts and pumpkin seeds;)) If you want something dense, subtly sweet and seriously addictive, this is the recipe for you!

Seedy Energy Squares

Serves: Makes 20-25 squares

Total Time: 35 minutes

Ingredients:

  • 2 ripe bananas
  • 2 1/2 cups rolled oats
  • 1/3 cup roasted pumpkin seeds
  • 1/3 cup hemp hearts
  • 1 tsp cinnamon
  • 1 tbsp vanilla
  • 1/4 cup coconut oil

Directions:

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Mash the bananas in a large bowl, then mix in the oil, vanilla and cinnamon until well combined.
  3. Add in the oats, pumpkin seeds and hemp hearts into the bowl and stir until well mixed.
  4. Dump the mixture into a parchment lined 8×8 baking pan, and spread it evenly around the bottom. Bake in the oven for about 20 minutes, until the sides are golden brown.
  5. Remove from the oven and cool completely before cutting into 20-25 squares.
  6. Enjoy!

Fig Bites

Hi!! Hope your Monday wasn’t too bad;) I have something that’ll make it 1000% better- fig bites! Dried figs are where it’s at people, they’re the perfect sweet and healthy treat. This recipe uses dried figs, oats and cinnamon to make the PERFECT snack or dessert in like 30 minutes. These bites taste like a cinnamon raisin cookie and I. LOVE. THEM. 👌👌👌

Fig Bites

Serves: Makes 12 bites

Total Time: 30 minutes

Ingredients:

  • 15 dried figs
  • 1/2 cup rolled oats
  • 1 tsp cinnamon

Directions:

  1. Fill a small pot with water and bring it to a boil. Remove from the heat and add in the figs, letting them soak for about 15 minutes.
  2. Transfer the figs to a blender, along with two tablespoons of the soaking liquid. Blend until a smooth paste forms.
  3. Scoop the fig paste into a bowl and mix in the oats and cinnamon. Roll out 12 tablespoon sized balls, and place in a container in the fridge.
  4. Enjoy!

3 Ingredient Peanut Butter Bars

Hi there! Today’s recipe is for 3 Ingredient Peanut Butter Bars. They’re a simple, healthy and delicious snack that are great for after school. Easy recipes like these are really handy, because with school and sports I’m super busy and usually in a rush to grab a good snack. Hope you enjoy!

3 Ingredient Peanut Butter Bars

Serves: Makes 6-9 Bars

Total Time: 30 minutes

Ingredients:

  • 2 ripe bananas
  • 1/2 cup natural peanut butter
  • 2 cups oats

Directions:

  1. Preheat your oven to 375 degrees Fahrenheit
  2. In a medium-sized bowl, mash the bananas. Mix in the peanut butter and oats.
  3. Put the mixture into an 8×8 baking pan and spread it out evenly. Bake for about 25 minutes.
  4. Put the bars into a sealed container in the fridge and let cool before eating.
  5. Enjoy!

Chocolate Zucchini Energy Bites

Hi guys! As you know, school is coming up and it’s time to stock up on snacks to keep you going through the school day. These energy bites taste amazing, and the addition of oats, dates, hemp hearts makes them a hearty snack. Plus, you can sneak an extra serving of veggies into your day by adding zucchini! The cocoa totally masks it and you won’t even know it’s there. Enjoy!

Chocolate Zucchini Energy Bites

Serves: Makes 9 Bites

Total Time: 30 minutes

Ingredients:

  • 16 small dates
  • 1 cup oats
  • 1/3 cup grated zucchini
  • 1/4 cup cocoa powder
  • 1/4 cup hemp hearts

Directions:

  1. Fill a bowl with hot water from the tap. Add in the dates and let them sit in the water for about 10 minutes, then drain.
  2. In a blender, pulse the oats until they resemble a fine flour. Add in the zucchini, dates, cocoa powder, and hemp hearts. Process until everything is combined.
  3. Scoop heaping tablespoons of the mixture into your hands and roll into balls. Place into a Tupperware and let sit in the fridge for 10 minutes before serving. Store in the fridge.
