Paprika Popcorn

I love some good popcorn, don’t you? It’s actually really easy to make your own; all you need are some kernels and some oil. This popcorn is seasoned with a combo of paprika and chilli powder, which gives it a really awesome flavour. There’s some salt in there too for some traditional popcorn taste. It’s the perfect movie snack! Enjoy;)

Paprika Popcorn

Serves: 3-4

Total Time: 10 minutes

Ingredients:

  • 1/2 cup whole grain popping corn
  • 3 tbsp melted coconut oil
  • 2 tsp paprika
  • 1 tsp chilli powder
  • 2 tsp salt

Directions:

  1. Put the melted oil and popping corn in a large pot and turn to medium heat. Cover the pot with a lid that is slightly askew so that some steam can escape. The corn should start popping once the oil is hot enough.
  2. Wait until you hear the popping stop, then remove the pot from the heat and let the popcorn cool.
  3. Add the chilli powder, paprika and salt to the popcorn and mix until evenly coated with spices. Pour into bowls and enjoy!

This stuff is seriously addictive. I think I ate half the batch in like 10 minutes😂😂 See you Friday!

Caramelized Bananas and Peanut Butter

I didn’t have a lot of time to make something super fancy today, but these Caramelized Bananas and Peanut Butter are super delicious. They come together in like 5 minutes, and are a great topping for your oats, yogurt, smoothie bowls and even ice cream😋😋😋 I know that I feature the combo of PB and banana a lot on my blog, but it’s one of my favourites, and there are so many simple and delicious recipes that can be made with it. Hope you enjoy this recipe!

Caramelized Bananas and Peanut Butter

Serves: 1-2

Total Time: 5 minutes

Ingredients:

  • 1 large ripe banana, sliced
  • 1 tsp Coconut oil
  • 1 tbsp natural peanut butter

Directions:

  1. Heat the coconut oil over medium heat in a small pot or pan. Add in the bananas and cook until soft and caramelized, about 3 minutes.
  2. Add in the peanut butter and cook for another 2 minutes. Remove from the heat and enjoy!

Tofu Sandwich

I promised I’d be back with more sandwiches, and I keep my promises. Today I have a delicious tofu sandwich for you that’s a bit simpler to make than my Epic Veggie Sandwich, but no less epic. It’s delicious and satisfying and will definitely have you looking forward to lunchtime. I like using sprouted grain bread, but any bread will do. This sandwich would be great on rye:)) Hope you enjoy!

Tofu Sandwich

Serves: 2

Total Time: 15 minutes

Ingredients:

  • 4 slices of sprouted grain bread, toasted
  • 1 tbsp olive oil
  • 1 175g block of extra firm tofu, drained (see Soy Marinated Tofu for more info on tofu)
  • 1/2 an avocado
  • 1 tomato, sliced
  • handful of sprouts
  • 2 pickles, sliced

Directions:

  1. Cut the tofu lengthwise to create four tofu “steaks”. Heat the olive oil in a pan and place the tofu in it. Cook until browned on one side, about 2 minutes, then flip and cook for an additional 2 minutes on the other side. Remove from the heat and let cool.
  2. Mash the avocado in a bowl. Scoop half of it onto a piece of bread and spread it around. Place two of the tofu “steaks” on top, along with half of the sliced tomato, half of the sprouts and one sliced pickles. Place another piece of bread on top.
  3. Repeat step 2 to make another sandwich, then enjoy!

Now you have another awesome veggie sandwich added into your repertoire!! These are my new favourite thing to make for lunches;))

Fruit Compote

Let’s face it: mornings suck. So let me paint you a picture of how they can be less sucky: you wake up, leap out of bed because you know you’ll soon be enjoying a delicious breakfast, brush your teeth, make and enjoy said delicious breakfast, get ready for school and leave the house feeling satisfied and happy that you got to eat something awesome. This fruit compote can make all of that happen😍😍 It’s super easy to make and tastes absolutely amazing with oatmeal, yogurt, or even on toast. It’s also full of fruit and contains no added sugar, which makes it a great, healthy way to start your day. Now go ahead and get ready to slay your mornings, because this compote is pretty dang good.

Fruit Compote

Servings: 1-2

Total Time: 15 minutes

Ingredients:

  • 1/2 a banana, sliced
  • 1/2 an apple, diced
  • 2 tbsp raisins
  • 1 cup berries (fresh or frozen)
  • 1/2 tsp cinnamon
  • 1/2 cup water

Directions:

  1. Throw everything into a small pot and bring to a boil.
  2. Turn the heat the low and let the mixture simmer for about 10 minutes, until the fruit has softened and most of the water has been cooked off.
  3. Enjoy over yogurt or oatmeal;)

March Reading List

Hey there;)) I really need to get back on my reading game, especially if I want to finish my 2020 Reading Challenge by the end of the year. This March I picked out 3 books that I’d like to finish, and while I’m in the midst of the first one, which is a bit slow, I’m excited to take some time to read and relax this month. Here are my picks for the month of March.

Emma

I started Emma towards the end of February. It’s by Jane Austen, so it’s over 200 years old and is considered to be a classic. It follows a young woman (Emma), who is smart, pretty and rich, and lives with her father. She enjoys matchmaking, and takes an interest into her friend Harriet’s love life. Although she doesn’t seem to want to find love, through trying to seek out mates for others she begins to explore her own heart. From what I’ve read so far, which is about 160 pages, this book is a bit dry and hard to get through at times. However, I’m trying to pay attention to the way Austen supposedly mocks the English upper class in this novel, and although I’m not quite sure where the plot is going, I’m going to power through this book because it fits into the “is becoming a movie in 2020” part of my reading challenge.

Dear Evan Hansen

This has been a pretty popular novel in the last couple of years, and is interesting because I’m pretty sure that it was adapted from a TV show, which is cool because it’s usually the other way around. This book is about a boy who claims to be a recently deceased teenager’s secret best friend, causing the grieving family to treat him like a son and for him to become more popular and feel like he belongs. Dear Evan Hansen just sort of grabbed my attention when I read the synopsis, and I’m excited to read it because I don’t usually read fiction that is rooted in the real world (unless it’s a murder mystery). I’ll be sure to let you guys know what I think of it.

The Bone Houses

The first time I noticed this book was on OwlCrate, which is an awesome book subscription service that I wish I was subscribed to (here’s a hint in case you want to buy me a gift someday), and it drew my eye because of it’s cool title and even cooler cover art. It’s about a girl named Ryn who looks after her family’s graveyard. But the dead buried their often awaken to become zombie-like-things called Bone Houses. Then this guy named Ellis comes into town, and the Bone Houses start attacking the town, like, more than usual. So they journey to the mountains to try and break this curse. I’m excited for this because it seems dark and deep and just really different, which is refreshing.
