Berry Banana Smoothie Bowl

Hello! In my world, there are two types of breakfasts; breakfasts that I make on weekdays, and breakfasts that I make on weekends. Weekday breakfasts normally consist of greek yogurt with banana and peanut butter, but on weekends I like to shake it up a bit, since I have more time. This Berry Banana Smoothie Bowl is sweet and refreshing, and adding spinach gives you a boost of vitamins to start your day. The recipe says that it makes one to two servings, but I don’t think that you’ll want to share after tasting it. I love smoothie bowls because the toppings are totally customizable, so go crazy! I hope this recipe starts your weekends off right!

Berry Banana Smoothie Bowl

Makes: 1-2 servings

Total Time: 5-10 minutes

 

Ingredients:

For the Smoothie:

  • 1/2 cup fresh or frozen mixed berries
  • 1/2 cup packed spinach
  • 2 bananas, chopped and frozen

Topping Suggestions:

Directions:

  1. Blend all Smoothie ingredients in a good blender. You may need to add a splash of water or almond milk if your frozen ingredients aren’t blending.
  2. Pour into a bowl and serve with toppings of your choice!

May Bullet Journal Set-Up with April Monthly Recap

Hi guys! Today I’ll be sharing my May Bullet Journal Set-Up and April Monthly recap;) I decided to go with a Mandala theme, and I’m super happy with the way that it turned out! The colours that I used are a few different shades of blue and purple, as well as some gold. Since colouring mandalas is pretty relaxing, all of the quotes in my spreads are based around zen and meditation, which I’d like to focus in this month. As I’m writing this I’m playing fetch the sock with my dog, so I’m sorry if there’s any typos;) Here’s my May bullet journal set-up!

Let’s start with my April monthly recap. Nothing really changed here, but I think it’s one of my prettier monthly recaps.

This is my title page! It took a while to draw and colour, but I think that it was worth it. Here’s a few pictures of the steps I took to complete my mandala:

I started by tracing a few circles as a guideline, and worked outwards from there. Once you get the hang of drawing these mandalas, you can skip this step.

My monthly calendar is simple but pretty;) I drew some mandalas around the May title, as well as my goal and blog planning sections.

My mood and habit trackers pretty much stayed the same as last month, but of course my mood tracker is a mood mandala, so each day I’ll colour in a section of the mandala according to the legend at the bottom of the page.

The last two pages before my first weekly spread are dedicated to my gratitude log and another quote page. I think that they both turned out well;))

And finally, my first weekly spread. I added a meditation tracker here because I forgot to in my big habit tracker.

April 2019 Bullet Journal Set-Up with March Monthly Recap

Hello again! I hope that everyone’s spring break was fun;) I actually felt pretty productive; I went for a run almost every day for some early track and field training and completed my April bullet journal set-up, which I’ll share with you in this post. Like pretty much every other month, I had some trouble coming up with a theme for April. But I finally ended up drawing inspiration from Hungarian embroidery. If you’ve never seen it, here’s what it looks like:

I’m part Hungarian, and so these kinds of patterns remind me of Easter, which happens to fall in April this year. The flowers are also very springy and give me an opportunity to use a bajillion different colours in my spreads, which is a good thing;) They do take a little while to draw though because of all the details, so some of my spreads are a bit more minimalistic because I didn’t want to draw a ton of flowers. In the end I was really happy with the way this turned out, and I hope you get some inspiration from today’s post!

We’ll start with my March monthly recap- I don’t think anything changed here. I’m going to miss the simplicity of drawing emeralds, but I’m excited for my new theme.

My title page probably took me the longest to draw out of all my spreads this month, but I think it looks pretty good. I drew a wreath around the word April and some more flowers in the corners of the page. The quote I chose is “let your joy burst forth like flowers in spring”, which I feel embodies this theme well.

Here I have my calendar. You can kind of see what I mean when I say minimalistic here, because I only drew two flower wreaths and there’s quite a bit of empty space. But you know what, that’s ok. Sometimes less is more.

My mood and habit trackers didn’t change much. I drew some flowers on either side of my habit tracker so they look more like embroidery. My mood tracker consists of a flower wreath, and each day I’ll colour in a flower, with the colour corresponding to the legend at the bottom. I used a lot of different colours this month, but my two main ones are a kind of coral colour and a nice yellow. I use these two colours the most throughout my spreads.

On the left is my gratitude log, and on the right is what I call my flex page. I do different things on this page depending on what I need that month. There’s a lot going on for me in April in terms of sports, so I decided to draw out an activity schedule so I know where I have to be at what time. I also included another quote on this page.

And finally my first weekly spread of the month. Nothing too crazy here.

Orange Kale Salad

Hi guys;) For lunch today I made a delicious Orange Kale salad. I feel like salads really get a really bad rep, because most of them aren’t very exciting. When I first started eating healthy, all I made was salads, and they were really boring and not very tasty. This kale salad, though, is what a salad should be: fresh, light and delicious!

I know that I’ve posted a lot of recipes this month, and that’s mainly because I’m in a book drought right now and I don’t know what to read next. I’m re-reading the Divergent series. If anyone has any book recommendations for me, please let me know! Anyways, here’s the recipe for my Orange Kale Salad.

Orange Kale Salad

Serves: 2 people as a main and 4 people as a side

Total Time: 15 minutes

Ingredients:

  • 3 cups chopped kale
  • 1 Orange, cut into small chunks
  • 1 Carrot; use a vegetable peeler to create carrot ribbons
  • 1 cup cooked quinoa
  • 1 can of white beans, drained and rinsed

For the dressing:

  • 1/4 cup olive oil
  • 1/4 cup orange juice
  • 1 tsp dijon mustard
  • 1 tsp maple syrup
  • Salt and pepper to taste

 

Directions:

  1. Toss all of the salad ingredients in a bowl.
  2. In a smaller bowl, whisk the dressing ingredients together.
  3. Add the dressing to the salad and mix well.
  4. Enjoy!

Veggie Noodle Stir-Fry

Hello! Today’s recipe is a Veggie Noodle Stir-Fry. It’s packed with broccoli, spinach and bell peppers, and fried with a sauce that’s absolutely to die for! Plus, it takes less than 20 minutes to make from boiling the noodles to serving it up. I used whole wheat spaghetti, but feel free to use brown rice noodles or even rice or quinoa if you don’t have anything else on hand. Let’s get started!

Veggie Noodle Stir-Fry

Serves: 1

Total Cook Time: 20 minutes

Ingredients:

  • 85g whole wheat spaghetti (or other noodles)
  • 2 cups broccoli florets
  • 2 cups spinach
  • 1/2 a bell pepper (I used red), sliced thinly
  • 1 tsp olive oil

For the sauce:

  • 1 tsp soy sauce
  • 1 clove garlic, minced
  • 1 tsp pure maple syrup
  • 1 tsp white vinegar
  • 1 tbs sesame oil
  • Juice of 1/2 a lemon
  • 1 tsp ground ginger

Directions:

  1. In a large pot of boiling water, cook the spaghetti for about 7 minutes, until al dente. Drain and set aside.
  2. Heat the oil in a pan over medium heat and cook the broccoli and peppers until the broccoli is browned and the peppers are soft, about 5-7 minutes.
  3. While the veggies are cooking, make the sauce by mixing all of the ingredients together in a bowl.
  4. Once the peppers and broccoli are cooked, add the spinach and noodles into the pan and fry until the spinach is wilted. Next, add in the sauce and coat the veggies and noodles with it.
  5. Fry for a few more minutes, adding a bit of salt if needed. Remove from heat and enjoy!

This recipe is great for a quick lunch or dinner and is super easy to make. You can switch up the veggies that you use from time to time- I think that mushrooms would go great with this! Have a great week;)
