Hi guys! I hope you’re keeping busy and satying safe;)) Spring is almost here, and so I thought I’d make a fresher recipe today. This Chickpea, Quinoa and Avocado Salad is light and makes a great lunch👍👍 I used tri colour quinoa, which I discovered a year ago and it’s awesome. It’s usually the same price as regular quinoa, but it’s three different colours and looks super cool. Also, there’s soy sauce mixed in with the avo, which is one of my new favourite combos. Here’s the recipe:
Chickpea, Quinoa and Avocado Salad
Serves: 3
Total Time: 20 minutes
Ingredients:
1/2 cup quinoa
1 cup water
1/2 a red bell pepper, diced
1 tomato, diced
1 avocado
1 tbsp olive oil
1 tbsp soy sauce
1 clove of garlic, minced
Juice of 1/2 a lime
1 can of chickpeas, drained and rinsed
Directions:
In a small pot, combine the quinoa and water. Bring to a boil, then reduce to a simmer, cover and cook until the water has evaporated, about 10-15 minutes. Remove from the heat and let cool.
In a small bowl, mash the avocado and add in the oil, lime, garlic, and salt sauce. Stir until combined.
Mix together the chickpeas, tomatoes, and peppers in a large bowl. Add in the quinoa and mashed avocado and stir. Enjoy!
Hey there guys:)) I’ve been posting a lot of recipes lately, but I thought that I’d post about some of the pantry ingredients that I always like to have on hand in order to make them. Having a few things that are always in your pantry is handy for meal prep and just cooking in general. Here are the pantry ingredients that I use most often;))
Oils
I usually like to have 3 kinds of oil on hand; olive, coconut and sesame. Olive is really great for sauteing things and starting curries and stews, whereas coconut oil is usually used to replace butter in baking. I mainly use sesame oil for flavouring Asian dishes, and unless I am making a stir fry I don’t really cook in it. Having oils in your pantry is essential to making pretty much every dish. If I would pick one to have on hand, it would be olive.
Vinegar
Vinegar is also something that is important to have. I love balsamic because you can use it in dressings and sauces, and I even cook veggies in it. Red wine vinegar is also great for salads, but I personally like the flavour of balsamic better.
Oats
I pretty much eat either yogurt or oats for breakfast everyday. Other than being a delicious start to your morning, oats are used a ton in baking and can be ground into a flour and used in a variety of different recipes. They’re super versatile and that makes them something that is awesome to have at all times in your pantry.
Whole Wheat Pasta
I like having whole wheat pasta because it cooks quickly and you can just throw a quick sauce on top for a delicious meal. Choosing whole wheat over regular gives you more whole grains, but still actually tastes really good. There are also chickpea and lentil pastas out there, which have lots of protein and are great as well.
Canned Goods
There are lots of canned goods that I like to have on hand at all times. Mainly legumes, like chickpeas, lentils, black beans, and red kidney beans, but having canned diced tomatoes and canned organic soup is awesome. Tomatoes allow you to make a whole range of curries, stews and sauces, while canned soup is great for quick lunches. Just make sure you buy a kind with no preservatives; organic is the way to go.
Quinoa
I’m actually out of quinoa right now, which makes it more evident how much I depend on it. Quinoa is amazing in bowls, underneath stews or in soup. It’s so versatile, good for you and easy to cook.

Let’s face it: mornings suck. So let me paint you a picture of how they can be less sucky: you wake up, leap out of bed because you know you’ll soon be enjoying a delicious breakfast, brush your teeth, make and enjoy said delicious breakfast, get ready for school and leave the house feeling satisfied and happy that you got to eat something awesome. This fruit compote can make all of that happen😍😍 It’s super easy to make and tastes absolutely amazing with oatmeal, yogurt, or even on toast. It’s also full of fruit and contains no added sugar, which makes it a great, healthy way to start your day. Now go ahead and get ready to slay your mornings, because this compote is pretty dang good.
Fruit Compote
Servings: 1-2
Total Time: 15 minutes
Ingredients:
1/2 a banana, sliced
1/2 an apple, diced
2 tbsp raisins
1 cup berries (fresh or frozen)
1/2 tsp cinnamon
1/2 cup water
Directions:
Throw everything into a small pot and bring to a boil.
Turn the heat the low and let the mixture simmer for about 10 minutes, until the fruit has softened and most of the water has been cooked off.
Enjoy over yogurt or oatmeal;)

Happy Pancake Day!! I wasn’t able to post yesterday, but you should be glad I made you wait because I have waaay more time today and was able to make these delicious pancakes. If I would’ve posted yesterday it probably would’ve been a nasty spinach salad or something. Pancakes are the best, man. Especially when they have apples and raisins in them like these ones do! They’re sweet and cinnamony and come together faster than it takes me to eat a whole batch, and trust me, I’m a pretty speedy eater when pancakes are involved. Now I’ll let you get to the recipe, because I don’t know about you, but I don’t like when blogs write twenty million things that you have to scroll through before you get to the pancakes. BRING ON THE PANCAKES ALREADY!
Cinnamon Raisin Apple Pancakes
Servings: 2
Total Time: 45 minutes
Ingredients:
1 ripe banana
1 1/3 cup oats
2 tbsp coconut oil
2 tsp baking powder
2 tbsp chia seeds
1 tsp cinnamon
1 1/4 cup water
1 small apple, peeled and diced
1/4 cup raisins
Directions:
In a blender, combine the oats, banana, chia seeds, cinnamon, coconut oil, baking powder and water until smooth. Transfer the batter to a bowl and stir in the apples and raisins.
Heat a pan over medium-low heat. Spoon the batter into the pan by tablespoons. Cook the pancakes on the first side until bubbles appear and stay in the pancake, about 2-3 minutes. Flip and cook for another 2-3 minutes, then transfer to a plate.
Enjoy!!

Hello there! Valentine’s Day is coming up, and it’s the perfect time to show your appreciation for your friends and family;) I love making homemade cards because they show how much you care! These cards are super cute and easy to make. I used the rose doodle from my February bullet journal theme, and different coloured card stock. Here’s how to make them!
First off, here’s how to draw these cute roses. You start with a circle, then draw lines around the perimeter, getting closer and closer to the center to create a rose. You can also add some leaves;)
For this first card, I used some red card stock and drew a rose border. I then used my brush pen to write out “Happy Valentine’s Day”, did some accents with a white gel pen, and drew a few extra roses.
On the nest card, I wrote out “Orange You Glad You’re My Friend?” on some paper and glued it onto orange card stock. Valentine’s Day is the best for puns!!
I love the heart on this yellow card;) I used the phrase “Be My Valentine”, and drew yellow roses at the top and bottom.
Finally, my favourite card! I drew blue roses in the corners and another heart at the bottom. The phrase on this one is “I’m Blue Without You”.
