Vanilla Protein Waffles

Just posted these super delicious Quick and Easy Banana Pancakes not too long ago, so I thought I should probably get a waffle recipe up here, because I know lots of people love waffles more than pancakes. Personally, I can’t decide! I love both pancakes and waffles- and I wouldn’t say not to either of these delicious recipes.

These Protein Waffles only require a few ingredients, are SO TASTY, and are, of course, full of protein. I recently got my hands on some protein powder for the first time in a little while, and so I’m so excited to use it! It makes my smoothie bowls and oats super creamy, and also is a great addition to pancakes, muffins, other baked goods, and these waffles. Protein is important for recovery after working out, building muscle, and just keeping your body functioning. The one I used is vegan, but there are many different kinds out there! If you’re looking for more info you can find it here. Adding protein like this at breakfast is a great way to start your day and fill you up! Eggs and Greek yogurt are also great sources of breakfast protein, but when you want to switch it up a bit, protein powder can be delicious. Especially in WAFFLE FORM.

All of the batter ingredients get mixed up in one bowl for the least amount of dishes possible (you’re welcome), and then simply poured into a waffle iron. Make sure that you spray your iron with a bit of cooking oil before adding the batter, so that you can remove your waffles as easy as possible! I forgot to spray the top of mine and had a bit of trouble- that’s why I’m here, so you can learn from my mistakes. My waffles were in the iron for about 2 minutes, and got nice and golden brown on the outside, and super fluffy on the inside!

I used vanilla protein powder in this recipe, because I love the flavour that it lends. But if all you have is another flavour- like chocolate- feel free to try it out! Chocolate waffles would also be very tasty.

After removing these beautiful waffles from the iron, I topped them with a dollop of Greek yogurt, some sliced strawberries, and a drizzle of peanut butter. SO. DANG. GOOD. This recipe makes 1 serving, or about 2 waffles, but if you want to share this amazingness, go ahead and double it. I did not want to share.

I hope you enjoy these Vanilla Protein Waffles! There are so many occasions to enjoy them- whether it’s breakfast on a Saturday morning, a nice Valentine’s Day brunch, or a delicious snack. Vanilla Protein Waffles

Ingredients

-1 scoop (34g) vanilla protein powder

-1/2 a ripe banana

-1 egg

-2 tbsp almond milk

-1/2 tsp baking powder

-1/4 tsp cinnamon

-cooking spray


Directions

1. Heat up your waffle iron.

2. Mash the banana in a small bowl. Whisk in the egg, and then add in the remaining ingredients (except for the cooking spray).

3. Spray the top and bottom of your waffle iron with the cooking spray. Scoop the waffle batter into the iron to fill 2 of the waffle moulds.

4. Clamp down the waffle iron and cook your waffles for about 2 minutes, until golden brown.

5. Carefully use a for to pry your waffles out of the iron, and serve warm with your favourite toppings.


Vanilla Protein Oats

Before you ask, Karen, I know I’ve done breakfast bowl posts lately, but they’re just so good. If I keep making freaking awesome breakfasts, am I not supposed to share them?!!?? Didn’t think so. Yes, these protein oats fall into the awesome category, and yes, you get to see the recipe.

I’ve just been really into the protein powder recently, as you can tell by my recipe for Mini Berry Protein Muffins, which you should DEFINITELY check out. It makes stuff super creamy and adds a nice flavour. And adds protein😂 Usually I’ll add a scoop to my morning smoothie bowl, but today I didn’t have any frozen bananas at the ready, so I tried these Vanilla Protein Oats!

They’re super simple and taste AMAZING (like most of my recipes, tbh). These oats will definitely fill you up and fuel you through your day! (I need this because of this pesky little thing called summer school😂) Don’t forget to throw lots toppings on there- toppings MAKE the bowl. Am I right or am I right? I used cherries, bananas, and lots of crunchy peanut butter, which is my new obsession. Any other fruits or nuts or other good stuff also works though, because the base of these oats is vanilla.

In a nutshell: THESE OATS ARE DELISH AND THEY’RE FULL OF PROTEIN AND CARBS AND GOOD STUFF AND YOU SHOULD MAKE THEM EVERY DAY OF THE WEEK AND TOP THEM WITH MORE DIFFERENT AWESOME STUFF EACH DAY. Sign me up!! Enjoy your oats☺️😋😉😉

Vanilla Protein Oats

Serves: 1

Total Time: 15 minutes

Ingredients:

  • 1/4 cup quick cooking steel cut oats
  • 1 scoop vanilla protein powder (about 1/2 cup)
  • 1 banana
  • 1 cup water
  • 1/2 tsp cinnamon
  • Some cherries for topping
  • Lots of peanut butter for topping;)

Directions:

  1. Mash half of the banana in a small pot, then stir in the oats, protein powder, cinnamon, and water.
  2. Bring the mixture to a simmer on the stove, then let cook for about 7-8 minutes, until the oats are cooked through. Add more water if needed, because the protein powder sure soaked up a lot!
  3. Remove the oats from the heat, scoop into a bowl, and top with the rest of the banana, some cherries, and some peanut butter. Yum!!

Mini Berry Protein Muffins

Hey guys! My phone broke down the other day and so I couldn’t really take and edit my pictures like I wanted, so I decided to just postpone this post for a bit. But don’t worry because the next week or so is STACKED with bullet journal stuff and new recipes (like this one) and a reading challenge update. Make sure that you’re checking in every day because I’ll have new posts going up daily until the end of the month!

To kick off this posting extravaganza, I’ve got these awesome Mini Berry Protein Muffins. I’ve been trying out some protein powder recently, and I actually really like it! I don’t just mix it with milk or water and drink it straight though, I usually throw a scoop into my smoothie bowl which makes it super creamy. I find that it’s a good way to incorporate some protein into my breakfast. The brand I use is Vega and I have their Protein and Greens powder in vanilla flavour. But if you decide to buy some powder to try out for yourself, do some research to find out what the ingredients are and where the protein is coming from. There are all kinds of protein powder; some are vegan, some get protein from animal collagen, and some have some artificial ingredients. Just make sure that your powder is right for you. If you don’t have any protein powder on hand, you can try and sub it out for whole wheat or all purpose flour, although I haven’t tested those out.

Anyways, I needed some new ways to use my protein powder. So why not make some muffins? And mini muffins, while I’m at it! Everything is cuter when it’s smaller. These muffins are naturally sweetened with maple syrup, and I find that the protein powder gives them a really nice flavour, like cake batter or something. There’s also an egg in here, which does give some extra protein and also acts as a binder. All of this protein and some whole grains from the oats, paired with a great taste, makes these muffins the perfect way to start your day! I used them to top a smoothie bowl, because, come on, mini muffins on a smoothie bowl? Does that not sound like the BEST THING EVER?

And I forgot to mention that these muffins have berries in them! I used saskatoons because I still have a whole ton frozen, but blueberries would be great as well. Now that it’s summer you might even be able to throw some fresh ones in there. So yeah, those are all of the delicious details of these cute lil’ muffins. Go find yourself a bowl (that’s right- this guy right here is a ONE BOWL recipe), mix some stuff up, pop these babes in the oven for like 15ish minutes and you’ve got yourself a snack that be lookin like a SNACK! Mini Berry Protein Muffins

Serves: Makes about 20 Mini Muffins

Total Time: 30 minutes

Ingredients:

  • 1/2 cup vanilla protein powder
  • 1 cup oats (I used quick-cooking steel cut oats, but rolled oats also work)
  • 2 tbsp melted coconut oil (mine was pre-melted by the summa heat lol)
  • 1/4 cup pure maple syrup
  • 1 egg
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 cup water
  • 1/3 cup fresh or frozen Saskatoon or blueberries

Directions:

  1. Preheat your oven to 350 degrees Fahrenheit, and line 20 holes in two mini muffin tins with paper liners, or grease with coconut oil.
  2. Mix together all of the ingredients in a large bowl.
  3. Scoop the muffin batter by tablespoon into the lined or greased mini muffin tin. Bake the muffins for 15-17 minutes, until a toothpick stuck in the centre comes out clean.
  4. Enjoy on smoothie bowls, oatmeal, as a snack, in cereal, or with yogurt!
