Chocolate and Coconut Granola

Granola has my heart, it’s true. And because it’s getting close to Valentine’s day, I made this delicious Chocolate and Coconut Granola. It’s made with simple ingredients and tastes AMAZING. The smell when it’s baking in the oven is absolutely heavenly. So know you’ll know where to find me on Valentine’s day; I’ll be curled up on the couch with a big bowl of this stuff. Here’s the recipe!

Chocolate and Coconut Granola

Serves: 6-8

Total Time: 30 minutes

Ingredients:

  • 1/4 cup coconut oil
  • 1 small ripe banana, mashed
  • 2 tbsp maple syrup
  • 2 tbsp cocoa powder
  • 3 cups rolled oats
  • 1 cup shredded coconut, unsweetened
  • 2 tbsp chia seeds

Directions:

  1. Preheat your oven to 400 degrees Farenheit.
  2. In a small pot over low heat, melt together the coconut oil, mashed banana, maple syrup and cocoa powder, then set the mixture aside.
  3. Mix the oats, coconut and chia seeds in a large bowl. Add in the coconut oil mixture and stir until combined.
  4. Spread out the granola on a parchment lined baking sheet and bake for 10 minutes. At this point, remove it from the oven and give it a stir to ensure even browning. Place it bake in the oven for an additional 10 minutes, then remove and enjoy!

This granola is great with yogurt or milk, or on top of oatmeal. I really want to try it on a smoothie bowl! See you later;))

Almond and Mushroom Salad Rolls

Hey there! I always love salad rolls when I visit Vietnamese restaurants, and so I thought that I’d make some of my own. These Salad rolls include lots of veggies, plus almonds and mushrooms cooked in a soy honey glaze. Rolling the rice paper is surprisingly not that hard, once you get the hang of it. I used square sheets of rice paper that were given to me, but round sheets also work. You can find sheets of rice paper in most grocery stores. These rolls make great snacks, appetizers, or light lunches. Enjoy!

Almond and Mushroom Salad Rolls

Serves: Makes 5 rolls

Total Time: 30-40 minutes

Ingredients:

  • 1 tbs olive oil
  • 5 small mushrooms, diced
  • 1/3 cup chopped almonds
  • 1/4 cup soy sauce
  • 1 tbsp honey
  • 1/2 an avocado, thinly sliced
  • 1/2 a cucumber, thinly sliced
  • 1 small carrot, grated
  • 1 cup shredded lettuce
  • 1/2 a red pepper, thinly sliced
  • 5 rice paper sheets, square or round

Directions:

  1. Heat the olive oil in a small pan over medium heat. Add in the mushrooms and almonds, and cook for two minutes. Then add the soy sauce and honey, cooking for another minute until most of the liquid has cooked off. Set the mixture aside.
  2. Take a large plate and fill it with a shallow layer of water. Place a sheet of rice paper in the water and press down on it to submerge it. Let it soak for about one minute, then flip it over, making sure the whole sheet is still submerged, and soak for another thirty seconds, massaging the water into the paper a bit until it’s translucent and pliable.
  3. Grab the sheet of rice paper and transfer it to a dry plate or cutting board. Place a pinch of lettuce in the middle of the sheet in a log shape, with the ends about an inch away from the side edges. Spread a tablespoon of the almond and mushroom mixture on top of the lettuce, followed by some shredded carrots, cucumber, pepper and avocado.
  4. Fold the inside edges of the rice paper sheet in towards the middle of the roll. Fold the edge closest to you over top of the ingredients in the centre, and continue to roll up the paper until a salad roll forms.
  5. Repeat steps 2-4 until 5 salad rolls are complete, then enjoy!

Fig Bites

Hi!! Hope your Monday wasn’t too bad;) I have something that’ll make it 1000% better- fig bites! Dried figs are where it’s at people, they’re the perfect sweet and healthy treat. This recipe uses dried figs, oats and cinnamon to make the PERFECT snack or dessert in like 30 minutes. These bites taste like a cinnamon raisin cookie and I. LOVE. THEM. 👌👌👌

Fig Bites

Serves: Makes 12 bites

Total Time: 30 minutes

Ingredients:

  • 15 dried figs
  • 1/2 cup rolled oats
  • 1 tsp cinnamon

Directions:

  1. Fill a small pot with water and bring it to a boil. Remove from the heat and add in the figs, letting them soak for about 15 minutes.
  2. Transfer the figs to a blender, along with two tablespoons of the soaking liquid. Blend until a smooth paste forms.
  3. Scoop the fig paste into a bowl and mix in the oats and cinnamon. Roll out 12 tablespoon sized balls, and place in a container in the fridge.
  4. Enjoy!

My Favourite Healthy Snacks

Happy Thanksgiving everyone! I love Thanksgiving because I get to spend time with my family and eat a bunch of good food:) Who knows, I might even whip up a Chocolate Saskatoon Berry Pie with Cinnamon Apples inside! For today’s post, I’m going to share my favourite healthy snacks. Some of them are homemade, and others you can pick up at the store. The reason that I’m writing this post is because I love to snack on the weekends, but I want to make sure that I’m eating good stuff and not filling up on junk food. All of these snacks taste really good and are sure to satisfy, whether you’re craving something sweet or salty. It’s good to have a bunch of them on hand, so that on lazy days you don’t have to get up from reading your book and actually make something to snack on. Here’s my list!

Dried Apples I legit think that I’m obsessed with these things. They’re appley and crunchy and just YUM! I have a recipe for them on the blog, but I’ll admit that it takes a lot of work to make a good amount since they shrink in the oven, so I like to buy them. Just make sure that they’re natural and preservative-free;))

Granola Granola makes a great snack because it’s crunchy while being sweet, plus you can toatlly customize it by adding in whatever you like. I prefer to make my own granola, because store-bought ones often contain a lot of refined sugar, but their are some varieties that are healthier. There are currently two granola recipes on the blog.

Popcorn I love love love popcorn! It’s my salty snack of choice and is actually quite healthy. You just have to buy the right kind- avoid flavoured popcorns becasue they usually contain a lot of soduim or even MSG. I like the regular BOOM CHICKA POP popcorn because it pretty much only contains popcorn, oil and a bit of salt.

Crackers and Hummus Crackers and hummus is one of those things that I could eat all day! I love a good brown rice cracker and roasted garlic hummus. You could eat veggies and hummus too but crackers are way more carby and delicious;)

Fruit Dried fruit, fresh fruit, frozen fruit, all fruit is awesome and makes a great snack! I particularly enjoy eating frozen blueberries in the summer. Once I spilled them on the carpet and made a big stain though, that wasn’t fun;)🤣🤣

Muffins I have two healthy muffin recipes in the blog, and I like to make big batches and freeze them so that I can defrost one whenever I’m craving a soft, warm muffin.

Nice Cream Lately, I’ve been blending up some frozen mango or banana to make a delicious treat with a sorbet like texture. It’s soooo good!

Apples and Peanut Butter This may be my favourite snack of all time. It’s so simple yet so delicious! I use natural peanut butter to avoid the preservatives in the processed kind.

3 Ingredient Peanut Butter Bars

Hi there! Today’s recipe is for 3 Ingredient Peanut Butter Bars. They’re a simple, healthy and delicious snack that are great for after school. Easy recipes like these are really handy, because with school and sports I’m super busy and usually in a rush to grab a good snack. Hope you enjoy!

3 Ingredient Peanut Butter Bars

Serves: Makes 6-9 Bars

Total Time: 30 minutes

Ingredients:

  • 2 ripe bananas
  • 1/2 cup natural peanut butter
  • 2 cups oats

Directions:

  1. Preheat your oven to 375 degrees Fahrenheit
  2. In a medium-sized bowl, mash the bananas. Mix in the peanut butter and oats.
  3. Put the mixture into an 8×8 baking pan and spread it out evenly. Bake for about 25 minutes.
  4. Put the bars into a sealed container in the fridge and let cool before eating.
  5. Enjoy!
