Cilantro Week: Mango Salsa

Hello;) Week three of herb month is here; Cilantro Week! The first recipe that I have for you guys was shown to me by my aunt, and is perfect for summer. This mango salsa works great with chips, on tacos, or as a side with any main course. It’s super fresh and colourful as well! As a side note, does anyone else have an obsession with mangoes? I think that I could eat them everyday. Put them together with some avocado, red onion, red pepper, tomatoes and cilantro……. delicious! But as with every week, first I’m going to give you some tips on growing this week’s herb.

Apparently cilantro does better in the cooler temperatures of spring and early fall, but my plant has been doing just fine sooooo…… Keep the dirt around your plants moist, and once they start to provide leaves, you can cut or pick them off. That’s pretty much it, cilantro is pretty low-maintenance. Here’s the Mango Salsa recipe!

Mango Salsa

Serves: 4-6

Total Time: 10 minutes

Ingredients:

  • 1 mango, diced
  • 1 small tomato, diced
  • 1/4 of a red onion, diced
  • 1/2 a red pepper, diced
  • 1/2 an avocado, diced
  • 1/3 cup of fresh cilantro
  • Juice of 1/2 a lime

Directions:

  1. Once all of the veggies are diced, toss them in a bowl with the lime juice and cilantro.
  2. Enjoy!

Avocado Tuna Salad Wrap

Hello! I’ve been super busy and haven’t been able to post in a while, but I can’t wait to share this delicious lunch recipe with you! I literally had a chicken salad sandwich for lunch every day last week, so I was craving something a little different, and tuna was the perfect option! Plus, using avocado instead of mayo makes it healthier and more delicious. Scroll down for the recipe!

Makes 1-2 servings (depending on how hungry you are!)

Ingredients:

  • 1 can of chunk tuna, drained
  • 1/4 white onion, finely chopped
  • 1 wrap (preferably whole wheat)
  • Half of an avocado
  • A few spinach leaves
  • About 1/4 of a cucumber, julienned
  • Salt and pepper to taste

Directions:

  1. Mash the avocado and mix in the tuna and onion, then season to taste with salt and pepper.
  2. Open the wrap and lay down some spinach leaves.
  3. Next, fill the wrap with the tuna mixture and the cucumbers. Make sure to put another layer of spinach over the cucumbers so that the wrap doesn’t get soggy.

Wrap up the wrap and you’re done!

This wrap is a great alternative to sandwiches (especially when you’ve been having the same one for a week straight!). It’s also super easy to make; you can do it before school in the morning. I hope that you enjoy them as much as I did!

Cocoa Power Smoothie

Hey everybody! As promised, I’m back with another post! Today I made a “Cocoa Power Smoothie” that’s full of delicious ingredients to give you an energy boost before your after-school activities. I added some cocoa powder for a little bit of chocolatey taste without any added sugar! Here’s the recipe.

Ingredients:

  • 2 small bananas
  • 1cup avocado (fresh or frozen)
  • 1 cup mixed berries (fresh or frozen)
  • 2 cups milk (preferably almond, but any kind will work)
  • 2 tablespoons cocoa powder

Directions:

  1. Put all of the ingredients into a blender.
  2. Blend until smooth, starting on a low speed and gradually raising the speed.
  3. Enjoy!

This smoothie can be enjoyed right away, or stored in the fridge for a few days after making it. Drink some for breakfast, as a snack, or even use it in a Greek Yogurt Smoothie Bowl! Let me know if you like this recipe in the comments, and I’ll come up with more in the future:)
