Hi there! Nothing hits the spot quite like a big bowl of soup. Ok I guess a scoop of peanut butter hits the spot too, but in the winter I could eat soup all day, and tomato soup is one of my favourites. This recipe uses roasted tomatoes, garlic and onions to pack in the flavour, and blending everything at the end creates a smooth texture that is to die for! There’s no broth in this soup either- just tomato upon tomato upon tomato, which is the way it should be. Hope you enjoy this delicious classic!😊😊
Roasted Tomato Soup
Serves: 4-6
Total Time: 50 minutes
Ingredients:
3 medium sized tomatoes, cut in half
1/2 a white or yellow onion, cut into wedges
4 cloves of garlic, left in the skins
2 tbs + 1 tsp olive oil
1 can crushed tomatoes
1 tbsp tomato paste
1/2 tbsp dried basil
Salt and pepper to taste
Directions:
Preheat your oven to 375 degrees Fahrenheit.
Place the halved tomatoes and wedges of onions on a parchment lined baking sheet and toss in 2 tbsp of olive oil. Place the garlic cloves on a small section of tin foil, toss in the tsp of olive oil and wrap up tightly, placing the package on the pan. Season the veggies with salt and pepper and bake for 30-35 minutes, until the tomatoes are soft and the onions are slightly charred.
In a large pot, combine the roasted tomatoes, onions, crushed tomatoes, tomato paste, basil, and more salt and pepper. Wait until the tinfoil has cooled off before removing the garlic cloves from the packet and their skins to add them to the pot. Stir and bring to a boil, then cover and simmer for ten minutes.
Remove from the heat and scoop the contents of the pot into a blender. Blend until smooth and enjoy!

Ok, these Brussels sprouts are life changing. LIFE. CHANGING. If you’re a Brussels sprout hater, than this combination of sweet and vinegary flavours will convert you. They’re crispy and easy to make as well! These sprouts are a great addition to your holiday menu. Here’s the recipe.
Maple Balsamic Brussels Sprouts
Total Time: 40 minutes
Serves: 2
Ingredients:
13 Brussels sprouts, cut in half lengthwise
1 tbsp olive oil
1 tbsp balsamic vinegar
1 tbsp maple syrup
Salt and pepper to taste
Directions:
Preheat your oven to 400 degrees Fahrenheit.
Toss the Brussels sprouts with the olive oil on a sheet pan lined with parchment. Sprinkle with salt and pepper.
Bake for about 25 minutes, until crispy.
Transfer to a bowl and toss with the balsamic and maple syrup. Put back on the pan and bake for another 5 minutes.

I have one of these and love it! It basically imprints a customizable design into your books and lets everyone know who it belongs to;)) It’s a really nice touch, especially if you have some favourite books that you know you’ll keep forever and want to personalize them. The ones that I saw online range from $25 to $75, but I’m sure that you could find cheaper ones on Etsy or Amazon.
Transparent Book Weight
I think that this is super cool and really useful. It holds the pages of your book down for a hands free reading experience! This would also be great for cookbooks. I could do so much more reading if I had one of these… I could read while cooking, getting ready in the morning….. I think I need one. The one I looked at was $15.
Reading Light
My eyes have adapted to reading in almost all conditions, because I refuse to stop reading even in the darkness (long car rides in the night are the worst!). I could definitely use another reading light; actually I need more than one beacuase it would be good if I could keep one in my school bag, one in my room and one in the car. This one is a great stocking stuffer and also, your friend’s eyeballs will thank you. I’m pretty sure that you can find these at the dollar store for, like, a dollar.
Clip On Bookmark
Yet another contraption that would make my life a heck of a lot easier. Bookmarks are really handy but when I take them out to continue reading, I forget to put them back in again. This bookmark clips on to your book so that you don’t forget to mark your page. Although I have gotten pretty good at memorizing numbers. See, this is why people need to read; it gives you night vision and a super awesome memory. The bookmark above is $30, but I bet if you dug a bit deeper you could find one for cheaper (hey that rhymed), or you could make your own.

I found out about Owl Crate a few months ago and I LOVE LOVE LOVE the concept; each month, they’ll send you a box that includes a book and a bunch of book-related goodies that are created by small businesses. It’s a great idea and I would personally love one of these boxes! You can purchase a 1 month, 3 month or 6 month subscrption.

Mugs are the perfect gift for the person who loves to curl up with a good book and a cup of coffee, cocoa or tea. There are tons of cute and funny bookish mugs out there- the one in the picture above was given to me by a friend and it’s so awesome!

The other day I was craving something sweet, and I was like, “you know what would hit the spot right about now? A good brownie”. So I headed to the kitchen and made myself some darn delicious brownies. These delectable bites of chocolate goodness aren’t too sweet and have a super intense chocolate flavour. The walnuts add great texture and also some holiday vibes; but feel free to use a different nut or no nuts at all if you’re not a nut person. My brother even approved these brownies before I told him that they were healthy, as he has a strange aversion to healthy food. But he couldn’t tell the difference so I mean….. GO MAKE THESE BROWNIES!👍
Walnut Brownies
Serves: Makes 16 small brownies
Total Time: 45 minutes
Ingredients:
1 ripe banana
1 cup oat flour
1/3 cup cocoa powder
1/3 cup coconut oil
1/4 cup maple syrup
1 tsp vanilla
1/4 tsp salt
1/3 cup chopped walnuts (optional)
Directions:
Preheat your oven to 350 degrees Fahrenheit.
In a large bowl, mash the banana. Stir in the oat flour and cocoa powder and mix until combined.
Next, add the coconut oil, maple syrup, vanilla and salt and stir to form the brownie batter. Mix in the walnuts at this point.
Grease an 8×8 baking pan with coconut oil. Pour in the brownie batter and spread it evenly around the pan. Place in the oven and bake for 25-30 minutes, until an inserted toothpick comes out clean.
Let the brownies cool, then freeze them in a ziploc or store in the fridge in an airtight container.
Hey there! These crumbles are super delicious and only take about 20 minutes to whip up- the perfect late night snack! They’re super healthy and have no refined sugar or butter. Enjoy!
Mini Strawberry Rhubarb Crumbles
Serves: 2
Total Time: 20 minutes
Ingredients:
1 cup chopped rhubarb
1 cup sliced strawberries
2 tbs + 1 tbs maple syrup
1/2 cup oats
1 tbs coconut oil
1 tsp vanilla
1 tsp cinnamon
1/2 tsp nutmeg
Directions:
Preheat your oven to 375 degrees Fahrenheit
In a bowl, mix together the rhubarb, strawberries and 2 tbs maple syrup. Split evenly between two small glass ramekins.
In another bowl, stir together the remaining ingredients. Sprinkle the crumble evenly over the two dishes of fruit and place in the oven for about 15 minutes.
