Chocolate Cherry Oatmeal

You know how I posted three recipes for Overnight Oatmeal a couple months back? Well, those are great to make ahead for rushed mornings, but if you have the time to make this Chocolate Cherry Oatmeal, I totally recommend it! In fifteen minutes you can have a bowl of creamy, chocolaty oats topped with seeds and of course, cherries. If you don’t have time to make this during weekdays, it’s a great breakfast to soothe your sweet tooth on the weekends. In short, this recipe hits the spot any day of the week! I used frozen cherries in this to top my oats, but if you don’t have some on hand, any fresh or frozen berry will do. Now let’s make some oatmeal!

Chocolate Cherry Oatmeal

Makes 1 Serving

Cook Time: 5-8 minutes

Ingredients:

  • 1 medium sized banana
  • 1/3 cup rolled oats
  • 2/3 cup water
  • 1 tbs unsweetened cocoa powder
  • 1/4 cup frozen cherries (or berries of your choice)
  • Your favourite toppings (nuts and seeds, nut and seed butters, dried fruit, etc.)

Directions:

  1. Mash half of the banana in a small pot. Add in the oats, cocoa, and water, and stir until combined.
  2. Place the pot over medium-high heat and bring the oat mixture to a boil.
  3. Turn the heat down to medium-low and simmer uncovered for 5-8 minutes, until desired thickness is reached. Make sure to stir the oats every couple minutes or so to avoid them sticking to the bottom of the pot.
  4. Remove the pot from the heat and pour its contents into a bowl. Top with the frozen cherries and other toppings of your choice. I like to slice the other half of the banana and use it to top the oats.
  5. Enjoy!

Nutty Apple Crumble

Hey guys! I for one love a good apple crumble, and with fall coming up (ewww), I thought that this would be the perfect time for this post. This crumble turned out great, and I ended up using peanut butter instead of the recommended coconut oil (surprise surprise), which makes it unique. But you can totally use coconut oil if you prefer. Almonds give a nice crunch, and using oat flour instead of regular flour makes it healthier.  Scroll down for the recipe.;)

Serves 4-6

Ingredients:

  • 4 Gala Apples, peeled and sliced
  • 1 cup rolled oats
  • 1 cup oat flour (make by grinding oats in your blender)
  • 1 tsp cinnamon
  • 1/4 tsp allspice
  • 1/4 cup melted natural peanut butter (or sub melted coconut oil)
  • 1/4 tsp salt (omit if you’re using salted peanut butter)
  • 1/4 cup whole almonds
  • Drizzle of honey (optional)

 

Directions:

  1. Preheat the oven to 350F.
  2. Mix together the oats, oat flour, cinnamon, allspice, salt and almonds in a medium sized bowl.img_9245
  3. Add in the peanut butter (or coconut oil) and mix until combined. You may need to get in there with your hands to get rid of chunks of peanut butter or oil.
  4. Place the peeled and sliced apples in a parchment lined baking dish.img_9246
  5. Sprinkle the oat mixture over the apples evenly.
  6. Place the crisp in the oven for about 40 minutes, until the apples are soft.
  7. After 40 minutes in the oven, take out the crisp and drizzle a little but of honey on it. Place it back in the oven for another 5 minutes. (If you’re not using honey, just bake it for a full 45 minutes;)).

3 Overnight Oatmeal Recipes to Try This Summer

Hi there! For me, summer is a great time to try new recipes and make a mental note to implement them in my routine for the rest of the year. So I thought that I would try out a few new overnight oatmeal recipes. Overnight Oatmeal is just what it sounds like- oatmeal made overnight by soaking the oats in milk. This means that it’s the perfect make-ahead option for busy mornings. If you have something against oatmeal, don’t worry. The texture of these oats is almost completely different than that of regular oatmeal, and there’s a lot more flavour. I used to have peanut butter banana overnight oatmeal for breakfast every morning- and honestly, I don’t know why I stopped. When something is this delicious and easy to make, how can you go wrong? Here are three of my favourite overnight oatmeal recipes.

  1. Peanut Butter Banana

Yes, PB and Banana strikes again! This is probably my favourite overnight oatmeal recipe of all time. However, if you’re not into the whole peanut butter thing, you can always use Homemade Almond Butter as a replacement, or just leave the nut butter out altogether. Anyway you make it, this recipe is a winner. Ingredients:

  • 1/3 cup rolled oats
  • 1/2 cup milk of your choice
  • 1/2 a banana, mashed
  • 1/2 tsp vanilla
  • 1/4 tsp cinnamon
  • 1 tbs peanut (or any nut) butter, plus additional for garnish

Directions:

  1. Mash the Banana in a small bowl.
  2. Mix in the nut butter until combined.
  3. Stir in all of the other ingredients.
  4. Cover the bowl with plastic wrap and refrigerate overnight.
  5. Uncover in the morning, top with additional nut butter, and enjoy!

2. Stone Fruit Crumble

A stone fruit is a fruit that has a pit in it, so cherries, peaches, nectarines and plums all count. I used plums in my oatmeal, but feel free to use any stone fruit you like.

Ingredients:

  • 1/3 cup rolled oats
  • 1/2 cup milk of your choice
  • 1/2 tsp vanilla
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 a stone fruit, sliced thinly

Directions:

  1. Mix all of the ingredients above in a small bowl except for the stone fruit until combined.
  2. Place the sliced stone fruit on top of the mixture.
  3. Cover the bowl with plastic wrap and chill overnight.
  4. Remove the wrap in the morning and enjoy!

3. Double Chocolate

This is for all you chocolate lovers out there! Which I’m pretty sure is all of us. This recipe has chocolate in the actual oatmeal itself, and if you want you can top it with some chocolate chips for extra chocolateyness (which should be a word so I’m making it one).

Ingredients:

  • 1/3 cup rolled oats
  • 1/2 cup milk of your choice
  • 1 1/2 tsp cocoa powder
  • 1/2 a banana, mashed
  • 1/2 tsp vanilla
  • Chocolate chips or nut butter for topping

Directions:

  1. Mash the banana in a small bowl.
  2. Mix in all of the other ingredients except for the garnish.
  3. Cover with plastic wrap and place in the fridge overnight.
  4. Uncover, top with your choice of garnish, and enjoy.

Scrumptious Sugar Free Muffins

Hello again! If you’re like me, finding healthy recipes that are simultaneously delicious can be tricky, especially when it comes to baking. I looked for a good muffin recipe for a while, but the ones I tried were either too dry, not sweet enough, or unhealthy. Finally, I stumbled across this one, and with a few tweaks I was able to bake a delicious, naturally sweet muffin! I’m not even joking when I say that these are some of the best muffins I’ve ever had, except for maybe the ones that my grandmothers make (both of them make pretty awesome muffins!). Make sure to check out my recipe down below!!

Ingredients: (Makes 9 Muffins)

  • 1 cup oat flour
  • 2 bananas
  • 1 cup oats
  • 1/2 cup honey, maple syrup or apple sauce
  • 4 tablespoons coconut oil, melted
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 cup add ins (optional)

Directions:

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Mash the bananas in a large bowl, then add in the sweetener, oat flour and melted coconut oil. Mix until combined.
  3. Next, add in the baking soda, powder, vanilla, cinnamon and salt and stir well.
  4. Finally, mix in oats and add ins. Some ideas are blueberries, nuts, or cranberries.
  5. Place the batter in a lined muffin tin ( if you don’t have liners, you can grease each cup with more coconut oil), and bake at 400 degrees for 15-20 minutes, or until a toothpick comes out clean with a few crumbs when inserted into the middle of a muffin.
  6. Take a spoon and eat the leftover batter while waiting for them to bake;)
  7. Let cool and enjoy!

Chocolate PB Banana Energy Balls

Hi peoples! If you love chocolate, peanut butter, and bananas as much as I do, then these energy balls are going to be your new favourite snack!! They’re healthy, chewy, and most importantly, delicious! This recipe is super simple and easy to double or even triple if you love them as much as I do;) Take a peek down below for the ingredients and instructions!

Ingredients (makes 8 balls)

  • 2 bananas
  • 1/3 cup all natural peanut butter
  • 2 tablespoons of cocoa powder
  • 1/2 cup oats
  • 1/2 cup oat flour (made from grinding oats in a dry blender)

Directions:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Mash the bananas in a large bowl. Add in the cocoa powder and peanut butter and mix until combined.
  3. Stir in the oats and oat flour. Oat flour is super easy to make- just throw some oats in a blender and grind them up! I like it because it’s more nutritious than regular flour. Once all of your ingredients are combined, the “dough” should look something like this:
  4. Roll the mixture into balls by the tablespoon full and put them on a pan lined with parchment paper.
  5. Bake for about 15 minutes, then remove and let cool before storing them in an airtight container in the fridge.

And thee you have it! Eat a few of these after school, for breakfast, or in between sports. You won’t believe that there’s no added sugar!
