Why I Journal plus 10 Journaling Prompts

Hi guys;) I’m this post I wanted to share why I journal, and I don’t mean bullet journaling. I mean sitting down and writing about how you feel and what’s going on in your life.

Journaling really helps me to know where I’m at. Releasing all of the thoughts in my head onto paper kind of organizes my mind and makes me reflect on what’s going on and what my next steps should be.

In my bullet journal I tend to do two reflections per month; one in the middle of the month and one at the end of the month. Some people journal every day or every week, but I’ve found that that’s what works for me. You should journal whenever you feel overwhelmed or you feel like you need to reflect on anything. I usually just write down whatever’s in my head at the moment, but sometimes I need a little nudge to get me started. Down below are ten journal prompts that you can use. Remember, like bullet journaling, there’s no right or wrong way to journal. Write whatever you need to, whenever you need to.

  1. How are you feeling right now? Why are you feeling this way?
  2. What could you do to make yourself feel better?
  3. What are three things that you’re grateful for in this moment?
  4. List five things that you love about yourself.
  5. Think ahead to the person you want to become in five years. If that person saw you now, what do you think they would say? What can you do right now to become that person?
  6. Make a list of the things that make you happy.
  7. In the past week, what have you done for others? What have you done for yourself? Which do you need to do more of?
  8. What can you improve on in your life right now? What are some things you’re doing right?
  9. What is something that you could do to bring you closer to your goals? Write something for today, this week, this month and this year.
  10. What’s something to look forward to in your life?

March 2019 Bullet Journal Set-Up (with February Monthly Recap)

Hi;)) I was originally going to post my March bullet journal set-up next week, but then I was like hey, it might be nice to post it a bit earlier so you guys actually have time to incorporate any ideas you like into your bullet journals! For the month of March I really wanted to do a green theme, so I decided on emeralds;) They’re really easy to draw and there’s so many different shapes you can use to keep things interesting. I used three different shades of green- a fairly light one, more of an emerald one, and a dark one. I hope you like my spreads!

Oh yeah, I wanted to quickly show you guys my February monthly recap. It’s exactly the same as January’s because I’m liking the way that it works for me. My favourite part of it is the monthly memories section- I love to paste pictures of the highlights of my month in there! I highly recommend implementing one into your journal.

Here we go with March. The title page is fairly simple, I just drew a bunch of different shapes and sizes of emeralds, and I wrote March in all caps because I’ve been doing a lot of calligraphy lately and wanted to switch things up;) On the left is a quote page, again surrounded by emeralds. I love the look of the simple handwriting I used, so I want to try and use that throughout this month.

This is my calendar. I wanted it to be more open and minimalistic this month, so I didn’t draw many lines in it! But I think it looks neat and we’ll see how it goes. There are some more emeralds in the background and of course some space for my goals and planning blog posts.

I didn’t change anything up with my habit tracker since I find it easy to fill out, but I did play around with my mood tracker. There’s a different emerald for each day, and I’ll colour it in according to my mood. Lighter green for happy and darker green for sad/mad.

And finally my gratitude log. Nothing too fancy going on here. I did however turn the last page before my first weekly spread back into a quote page, because I found that I can track my workouts on a week to week basis, and I didn’t use the brain dump as much as I thought I would. My calligraphy wasn’t on point for the quote, but I love the border of emeralds.

5 Quick and Healthy Lunch Ideas

Hello and Happy Saturday! I hope that your guys’ Valentine’s Day rocked;) The topic of today’s post is quick and healthy lunch ideas. I’ve done similar posts such as Healthy Lunches 101 and a variety of Freezable Recipes, but I thought that I’d share some recipes that can be made in about 10-15 minutes in the morning. There are a few ingredients in some of these lunches that should probably be prepared the night before, and for the most part they’re pretty simple. Here’s a list of things that I like to have on hand, so that making lunches in the morning is easier:

  • Roasted Chickpeas
  • Cooked Quinoa
  • Lots of Fruits and Veggies
  • Guac or pesto or tzatziki, some sort of condiment
  • Sprouted Grain Bread
  • Brown Rice Crackers

These are staples that you can find at any store. Roasting chickpeas and cooking quinoa doesn’t take very long, and if you do a big batch then you’re good for the week. Let’s get into these quick and healthy lunch ideas:))

Mediterranean Salad

Ingredients To Be Prepped Before Hand:

  • 3/4 cup cooked quinoa
  • 1/2 cup roasted chickpeas

Other Ingredients:

  • 1 tomato, cut into eighths
  • 1/4 of a cucumber, cut into half circles
  • 1 tbs avocado oil
  • 1 tbs red wine vinegar
  • Salt
  • Pepper
  • Oregano

Directions:

  1. Put the quinoa, tomato, cucumber, and chickpeas into a container.
  2. In a separate, smaller container, mix together the oil, vinegar, salt, pepper, and oregano.
  3. Pack yourself some fruit, crackers, and a fork, and there’s your lunch.
  4. When it’s time to eat, pour the dressing into the salad and shake it up inside the container.

Avocado Salad Sandwich

Ingredients:

  • 1/2 a ripe avocado
  • 2 pieces of sprouted grain bread
  • Protein: 1 can of tuna, 1/2 cup chopped chicken breast, 1/2 cup roasted chickpeas, 2 chopped hard-boiled eggs, anything goes!!
  • 1 sprig green onion

Directions:

  1. Mash the avocado in a bowl.
  2. Cut up the green onions.
  3. Mix together your protein with the avocado and green onion.
  4. Put the mixture on two slices of bread and slice the sandwich in half.
  5. Pack a veggies and some greek yogurt along side your sandwich.
  6. Lunch is served!

15-Minute Fajitas

Ingredients To Be Prepped Before Hand:

  • 3/4 cup Cooked Quinoa

Other Ingredients:

  • 1/2 cup sliced mushrooms*
  • 1 thinly sliced bell pepper*
  • 1 thinly sliced onion*
  • 1/2 tbs avocado oil
  • 1 tsp chile powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/4 tsp cayenne powder
  • 1/4 cup water

*the thinner you slice your veggies, the faster they will cook.

Directions:

  1. Heat the oil in a pan over medium heat. Add in the vegetables and cook until slightly soft.
  2. Mix together the water and spices, and add the mixture to the pan. Let simmer until the water has evaporated and the veggies are soft.
  3. Put into a container on top of the quinoa, and add some guac or fresh tomatoes if you’d like. Pack some fruits and veggies and there you go.

Quinoa “Fried Rice”

Ingredients To Be Prepped Before Hand:1 cup cooked quinoa

Other Ingredients:

  • 1 tbs sesame oil
  • 1 tsp soy sauce
  • 1/2 cup sliced mushrooms
  • 1/4 cup cherry tomatoes, sliced in half
  • 1 spring of green onion
  • 1 egg
  • 1 tsp ground ginger

Directions:

  1. Heat the sesame oil in a pan. Add in the quinoa, mushrooms, cherry tomatoes, and sliced green onion.
  2. Cook until the mushrooms and tomatoes are soft. Then season wit soy sauce and ginger.
  3. Make a well in the middle of the pan and crack the egg into it. Scramble the egg and cook it through before incorporating it into the quinoa mixture.
  4. Place the fried quinoa into a container and chop up some cucumbers and apples for a side.

Lazy Wrap

Ingredients:1 whole wheat wrap or pita

  • Leftover protein- chicken breast, roasted chickpeas, or a chopped up Black Bean Quinoa Burger from the night before
  • 1/2 a Tomato, diced
  • Some lettuce
  • A sauce; guacamole, pesto,tzatziki, hummus, anything you like.

Directions:Put all of your ingredients into the wrap and wrap it up.

  1. Sound too easy? That’s because it’s called a Lazy Wrap.
  2. You’re done now.

Lentil Turmeric Quinoa with Spinach and Mushrooms

Hi!! Hope everyone’s having a great week so far;) In this post I’ll be sharing a recipe that is kind of big skillet of whatever I had I my fridge; it’s a great way to use up left overs. So if you want to switch out the ingredients in this recipe for ones that you have on hand and need to use up, go for it. Peppers, chickpeas, beans, and other kinds of greens would definitely work well in place of mushrooms, lentils and spinach. Anything that’s left over from a week of eating can be tossed in here. This recipe makes enough for two full servings, so if you make it for dinner one night it’s great for lunch the next day. Here’s how to make my Lentil Turmeric Quinoa with Spinach and Mushrooms!

Lentil Turmeric Quinoa with Spinach and Mushrooms

Cook Time: 30-40 minutes

Serves: 2 as a main course, 4 as a side dish

Ingredients:

  • 2 cups cooked quinoa
  • 1/2 cup dry green lentils
  • 1/2 tbs coconut oil
  • 1/2 a medium onion
  • 2 garlic cloves, finely chopped or minced
  • 1 celery stalk, chopped
  • 1 1/2 cup sliced mushrooms
  • 2 cups spinach
  • 1 tsp turmeric
  • 2 tsp cumin
  • 1 tsp coriander
  • 1 tsp allspice
  • Salt and pepper to taste
  • Water, as needed

Directions:

  1. Rinse the lentils and pick out any shrivelled up ones. Put them in a small pot with 1 1/2 cups water and bring to a boil, then turn the heat down and let the lentils cook in the simmering water for about 30 minutes, or until tender.
  2. While the lentils are cooking, heat the coconut oil in a large skillet. Add the garlic, onions and celery and cook until the opinions are translucent, about 6-8 minutes. Feel free to add a little bit of water to the pan to prevent the veggies from sticking.
  3. Add in the mushrooms and cook until soft.
  4. Next, put the cooked quinoa and all of the spices into the pan. Mix everything together and then add the spinach, cooking until it’s just wilted.
  5. Remove from the heat and add in the cooked lentils.
  6. Enjoy!

I hope that you enjoy this dish and have fun playing around with different combinations of vegetables. This is going to be my new go-to quinoa recipe;) Bye for now!

February 2019 Bullet Journal Set-Up (With January Monthly Recap)

Hi again! After much careful consideration, I was able to come up with a fun bullet journal theme for February. I wanted to do something a little different than roses or hearts, but still related to Valentine’s day. So this month my theme is Hot Air Balloons! I think that hot air balloons are pretty romantic so it fits in with the whole love thing. They’re easy to draw but you can have a ton of fun with different patterns. My January monthly recap is also featured in this post, and it looks a little different from the ones I did last year due to the fact that I have more space, so I’m pretty excited about that too. Let’s get into my spreads!

Here we have my January Recap/Memories/Reflection. I wanted space to really reflect at the end of the month about what’s going on in my life, and also somewhere to paste any cool pictures of events that went on. The monthly recap section is similar to last year’s, but I added some things like workout progress and a space to write down which books I read, because I didn’t add it in at the beginning of my journal. Looking back, I might need to expand that in the future because I read, like, a lot of books. So yeah, I guess I’ll see how that goes and I might tweak it a bit in February.

Here’s my title page;) I love the way it turned out because it’s so bright and airy and feminine, which is cute for February. In addition to drawing a few hot air balloons, I also included some simple clouds and birds to fill the empty space. The colours that I used are a light pink marker and my light blue zebra mildliner. My quote for the month is “Oh, The Places You’ll Go”, which fits the hot air balloon theme and reminds me that this month I want to be more adventurous.

This is my calendar layout- I apologize for all of the blacked-out events. I always forget to take a picture of my spreads before I write in them! Anyways, I continued the clouds, birds and balloons in this spread, but in the background so that it looks like the calendar is floating in the sky. I also gave myself a bigger space to write my goals and plan blog posts, because I almost ran out of space last month.

These are my trackers for the month. I kept my habit tracker the same, because I find it quick to draw and it works pretty well for me. I switched up my mood tracker a bit though; every day I’ll colour in a portion of the balloon according to the legend on the side. Light pink means I was really happy and dark blue means I had an off day. I tried to make these two spreads cohesive and look like they’re in the same sky, and I think it worked well.

Here’s my gratitude log, which also didn’t change much from last month. On the opposite side, however, I made space for a Workout Tracker and Brain Dump. It’ll be nice to keep track of the weight that I’m squatting, pressing and curling, and also which days that I did cardio. As for the brain dump, last month felt like I needed to write random things down, so I decided to try it. I might move to a full page next month if I need more room.

And lastly my first weekly spread. Because I have the space I decided to only do two days in this spread so that I can start on a Sunday the following week. On the right is a quote page that says, “Once you have tasted the taste of sky, you will forever look up.” from Leonardo Da Vinci.
